Sophie Jacobine de Neergaard ENG
Sophie Jacobine de Neergaard (1810-1857) was born on May 16, 1810, at Høstemark. She was the daughter of estate owner Johan Michael de Neergaard, who owned Høstemark, Egense Klostre, Store Restrup, and Vivebrogaard. On April 4, 1829, Sophie married Anders Didrich Dinesen (1798-1840), who had taken over Kragerup Estate after the death of his father, Jens Kraft Dinesen, in 1827. They had three children together.
When Sophie's husband passed away, their eldest son, Jens Kraft Jacob Sophus Dinesen (1830-1910), was only 10 years old and too young to manage Kragerup Estate. Thus, Sophie took over the administration of the estate and proved to be highly competent. After her husband's death, she continued the construction of the estate's two current wings, which were completed in 1843. She also replaced the labor services and built the Rugskov farm.
Sophie died in Copenhagen on November 23, 1857, at the age of only 47. The 8th generation of the Dinesen family at Kragerup Estate describes her as a resourceful woman:
"Sophie Jacobine Dinesen was an enterprising woman who, in 1829, wrote down her best recipes in ink. She lived in a different era with open fireplaces and copper cookware but managed to create delightful recipes, from rye bread ice cream to crayfish pudding and chicken soufflé. We found the recipes in the archives in 2018, but they were difficult to decipher as they used old measurements like 'pot' and 'pæl'."
